Ingredients

Scale

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1 cup Greek yogurt (or sour cream)
  • ⅓ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup heavy whipping cream (optional, for extra creaminess)

For the Fruit Salad:

  • 1 cup strawberries, sliced
  • 1 cup blueberries
  • 1 cup grapes, halved
  • 1 cup pineapple chunks
  • 1 cup bananas, sliced
  • ½ cup mandarin oranges, drained
  • ½ cup mini marshmallows (optional, for extra fluffiness)

Instructions

Prepare the Cheesecake Mixture:

  1. In a large mixing bowl, beat the cream cheese until smooth and creamy.
  2. Add the Greek yogurt, powdered sugar, and vanilla extract. Mix until well combined.
  3. (Optional) If using, whip the heavy whipping cream in a separate bowl until soft peaks form, then fold it into the cheesecake mixture for a lighter texture.

Prepare the Fruit Salad:

  1. Wash and dry all the fruits. Slice the strawberries, grapes, bananas, and pineapples into bite-sized pieces.
  2. In a large serving bowl, gently combine all the fruits.

Combine & Chill:

  1. Pour the cheesecake mixture over the fruit and gently fold everything together until the fruit is well coated.
  2. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to blend.

Serve & Enjoy:

  1. Serve chilled and garnish with extra fruit, a drizzle of honey, or crushed graham crackers for a more cheesecake-like experience!

Notes

  • Storage: Best enjoyed fresh, but leftovers can be stored in an airtight container in the fridge for up to 2 days.
  • Prevent Browning: If making ahead, toss the bananas in a little lemon juice to keep them from browning.
  • Make It Lighter: Swap out the cream cheese for vanilla Greek yogurt for a lower-calorie version.
  • Add Crunch: Sprinkle crushed graham crackers or toasted nuts on top before serving for a delicious texture contrast.
