Ingredients
For the Chicken:
-
4 large boneless, skinless chicken breasts (about 800 g)
-
1 tsp paprika
-
Salt and pepper, to taste
For the Mushroom Filling:
-
1 cup mushrooms (cremini, baby bella, or portobello), chopped
-
2 tbsp butter
-
2 garlic cloves, minced
-
1 cup shredded mozzarella cheese
-
½ cup grated Parmesan cheese
-
Optional: chopped spinach, sun-dried tomatoes, or bacon bits
For the Garlic Butter Sauce:
-
¼ cup butter
-
1 tbsp olive oil
-
3 garlic cloves, minced
-
1 tbsp fresh parsley, chopped
Instructions
-
Prep Chicken: Butterfly the chicken by slicing each breast horizontally (not all the way through), and open it like a book. Season inside and out with paprika, salt, and pepper.
-
Make Filling: In a skillet, melt 2 tbsp butter. Add chopped mushrooms and cook 5 minutes until soft. Stir in garlic and cook 1 minute. Remove from heat and stir in mozzarella and Parmesan.
-
Stuff Chicken: Fill each chicken breast with the mushroom-cheese mixture. Use toothpicks to secure the edges.
-
Sear Chicken: In a skillet over medium heat, add olive oil. Sear the stuffed chicken for 3–4 minutes per side until golden.
-
Make Sauce: In a saucepan, melt ¼ cup butter. Add minced garlic and cook for 1–2 minutes. Stir in parsley.
-
Bake: Pour garlic butter over the seared chicken in the skillet or a baking dish. Bake at 375°F (190°C) for 20 minutes or until internal temperature reaches 165°F (75°C).
-
Serve: Remove toothpicks and serve hot with your favorite side dishes.
Notes
Don’t overfill the chicken—leave room to fold without leaking.
Use a meat thermometer to avoid overcooking.
Double the garlic butter sauce to pour over mashed potatoes or veggies.
Great for special dinners or meal prep—slice leftovers into sandwiches or wraps.
