With ground beef, fluffy rice, creamy mushroom soup, and melty cheddar, it’s hearty, budget-friendly, and perfect for feeding the family. Easy to prep, bake, and reheat, this casserole is a weeknight lifesaver that delivers cozy, homemade flavor every time.

Ingredients

Scale
  • 1 lb (450 g) ground beef

  • 1 medium onion, chopped

  • 1 garlic clove, minced

  • 1 cup (200 g) uncooked long-grain rice

  • 2 cups (480 ml) beef broth

  • 1 can (10.75 oz / 305 g) cream of mushroom soup

  • 1 cup (115 g) shredded cheddar cheese

  • 1/2 tsp (2.5 g) salt

  • 1/2 tsp (2.5 g) black pepper

  • 1/2 tsp (2.5 g) paprika

  • 1/4 cup (15 g) chopped fresh parsley (for garnish)

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  • In a large skillet, cook ground beef with onion and garlic over medium heat until browned. Drain excess fat.

  • Stir in rice, beef broth, cream of mushroom soup, salt, pepper, and paprika. Bring to a boil, then reduce heat and simmer for 5 minutes.

  • Transfer mixture to prepared baking dish. Cover with foil and bake for 25 minutes.

  • Remove foil, sprinkle cheddar cheese on top, and bake uncovered for 10–15 minutes until bubbly.

  • Garnish with parsley and serve hot.

Notes

If rice is undercooked, add a splash of broth and bake covered for a few more minutes.

Swap half the beef with ground turkey or chicken for a lighter version.

Add mushrooms, peas, or bell peppers for extra veggies.

Try cheese blends like Colby Jack or mozzarella for variation.

This casserole tastes even better the next day.
