Description
A quick and easy Mexican-inspired skillet dinner made with lean ground beef, black beans, corn, tomatoes, rice, taco seasoning, salsa, and melted Colby Jack cheese.

- 1 pound lean ground beef
- 1/2 medium onion, diced
- 3 tablespoons taco seasoning
- 1/2 cup prepared salsa
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can sweet corn, undrained
- 1 (10-ounce) can diced tomatoes and green chiles, undrained
- 1 (8.5-ounce) bag prepared Mexican-style Ready Rice
- 4 ounces Colby Jack cheese, freshly shredded
- Avocado oil spray or olive oil
- Fresh cilantro, optional
- Sliced avocado, optional
- Sour cream, optional
- Crushed tortilla chips, optional
Instructions
- Heat a large oven-safe skillet over medium heat and lightly coat it with avocado oil spray or olive oil.
- Add the ground beef and diced onion. Cook for 8 to 10 minutes, breaking up the beef, until the beef is cooked through and the onion is soft.
- Set the oven to broil and position the oven rack in the middle.
- Stir the taco seasoning and salsa into the cooked beef and onion.
- Add the drained black beans, undrained corn, and undrained diced tomatoes with green chiles. Stir well.
- Simmer for 5 to 6 minutes until most of the excess liquid cooks down.
- Prepare the Ready Rice according to its package directions, then stir it into the skillet.
- Sprinkle the freshly shredded Colby Jack evenly over the mixture.
- Place the skillet under the broiler for about 1 minute, watching continuously, until the cheese melts and bubbles.
- Remove carefully, add desired garnishes, and serve hot.
Notes
- Shred Colby Jack directly from the block for a smoother melted topping.
- If your skillet is not oven-safe, transfer the cooked mixture to an oven-safe baking dish before adding cheese and broiling.
- Add diced bell pepper or minced garlic with the onion for additional flavor.
- For more heat, add jalapeño, cayenne pepper, hot sauce, or spicy salsa.
- Cook long-grain rice, brown rice, or cauliflower rice separately if you want to replace the prepared rice.
