Description

Cherry Yum Yum is a classic no-bake Southern dessert with a buttery graham cracker crust, thick cream cheese filling, and sweet cherry pie filling layered in the center.


Ingredients

  • 1 1/4 cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • 1 8-ounce package cream cheese, softened
  • 1/2 cup confectioners’ sugar
  • 1/4 teaspoon almond extract
  • 2 cups whipping cream
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons granulated sugar
  • 1 21-ounce can cherry pie filling

Instructions

  1. Spray a 9×9-inch square baking dish with nonstick cooking spray.
  2. Combine graham cracker crumbs and melted butter in a bowl. Mix with a fork until the crumbs are evenly moistened.
  3. Reserve 2 tablespoons of the crumb mixture for topping.
  4. Press the remaining crumb mixture firmly into the bottom of the prepared baking dish.
  5. Beat softened cream cheese, confectioners’ sugar, and almond extract with an electric mixer until smooth.
  6. In a separate bowl, whip the whipping cream, granulated sugar, and vanilla extract until stiff peaks form.
  7. Fold the whipped cream into the cream cheese mixture by hand until well combined.
  8. Spread slightly less than half of the cream mixture evenly over the crust.
  9. Spoon cherry pie filling over the cream layer and gently spread it evenly.
  10. Spread the remaining cream mixture over the cherry layer, covering it completely.
  11. Sprinkle the reserved graham cracker crumbs over the top.
  12. Cover and refrigerate for several hours or overnight before serving.

Notes

  1. Premium cherry pie filling adds more cherries to the center layer.
  2. 1/3-less-fat cream cheese works well in this recipe.
  3. You may substitute one 8-ounce container of whipped topping for the homemade whipped cream.
  4. For a 9×13-inch pan, double the recipe for thick layers.
