Description

A warm, melty chicken and avocado sandwich layered with cheese on toasted bread, perfect for a quick but comforting lunch or dinner at home.


Ingredients

  • 1 1/2 cups cooked chicken breast, sliced or shredded
  • 1 medium ripe avocado, sliced or lightly mashed
  • 4 slices meltable cheese (cheddar, provolone, gouda, or Monterey Jack)
  • 4 slices sturdy bread (sourdough, ciabatta, or country loaf)
  • 2 tablespoons mayonnaise or chipotle mayo
  • 12 tablespoons softened butter or grilling spread
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Thin-sliced red onion, optional
  • Tomato slices, optional
  • Pickled jalapeños, optional
  • Fresh cilantro or parsley, optional
  • Honey mustard or smoky sauce, optional
  • Crushed red pepper flakes, optional

Instructions

  1. Season the cooked chicken lightly with salt and pepper if needed, then slice or shred it into bite-size pieces so it layers easily in the sandwich.
  2. Slice or mash the avocado and sprinkle it with a small pinch of salt to bring out the flavor.
  3. Lay out the bread slices and spread mayonnaise or chipotle mayo evenly on one side of each slice.
  4. Place one slice of cheese on two of the bread slices, then add an even layer of chicken over the cheese.
  5. Top the chicken with avocado and any optional add-ins such as red onion, tomato slices, jalapeños, herbs, or a drizzle of honey mustard or smoky sauce.
  6. Add a second slice of cheese over the fillings if you want an extra gooey melt, then cap each sandwich with the remaining bread slices, mayo side facing in.
  7. Lightly butter the outside of each sandwich on both sides to help the bread brown and crisp in the pan.
  8. Preheat a skillet, griddle, or panini press over medium heat.
  9. Place the sandwiches in the hot pan and cook slowly until the first side is golden brown and the cheese begins to melt, about 3–4 minutes.
  10. Flip the sandwiches carefully and cook the second side until the bread is crisp and the cheese is fully melted, another 3–4 minutes.
  11. Transfer the sandwiches to a cutting board and let them rest for 1–2 minutes so the cheese can settle.
  12. Slice each sandwich in half and serve warm while the cheese is still melty and the bread is crisp.

Notes

  1. You can use leftover or rotisserie chicken to save time and still get great flavor.
  2. Slice the chicken, avocado, and vegetables thinly so the sandwich layers evenly and stays easy to eat.
  3. Cook the sandwich over medium heat so the cheese melts fully without burning the bread.
  4. Assemble the sandwich just before cooking to keep the bread from becoming soggy, especially if you add tomatoes or sauce.
  5. If you need to reheat leftovers, use a skillet or toaster oven instead of the microwave to keep the bread crisp.
