Ingredients

Scale
  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 avocado sliced
  • 4 slices cheese (Swiss, cheddar, or provolone)
  • 4 slices bread (sourdough or ciabatta)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion thinly sliced
  • 1 tomato sliced
  • Butter or olive oil for grilling

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium high heat.
  3. Cook chicken for 6 to 7 minutes per side until fully cooked.
  4. Remove chicken and rest for a few minutes then slice thinly.
  5. Spread mayonnaise and Dijon mustard on each slice of bread.
  6. Layer chicken, avocado, cheese, red onion, and tomato on two slices of bread.
  7. Top with remaining bread slices.
  8. Heat butter or olive oil in a skillet over medium heat.
  9. Grill sandwiches for about 3 to 4 minutes per side until golden brown and cheese melts.
  10. Slice and serve warm.

Notes

  1. Use sourdough or ciabatta for best texture.
  2. Press sandwiches gently while grilling to melt cheese evenly.
  3. Use ripe avocado for creamier flavor.
