Description

This creamy Chicken Broccoli Rice Casserole combines tender chicken, broccoli, cooked rice, cheddar cheese, and a savory sauce in one comforting family dinner.

Ingredients

Scale
  • 2 cups cooked chicken, diced
  • 2 cups broccoli florets, cut into bite-sized pieces
  • 2 cups cooked white or brown rice
  • 2 cups shredded cheddar cheese, divided
  • 1 can (10.5 ounces) cream of chicken soup
  • 1/2 cup milk
  • 1/4 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crispy fried onions, optional

Instructions

  1. Preheat the oven to 375°F and grease a 9-by-13-inch casserole dish.
  2. Combine the cooked chicken, broccoli florets, and cooked rice in a large mixing bowl.
  3. Whisk together the cream of chicken soup, milk, sour cream, garlic powder, onion powder, salt, and black pepper in a separate bowl.
  4. Pour the creamy mixture over the chicken, broccoli, and rice.
  5. Add 1 1/2 cups shredded cheddar cheese and stir gently until evenly combined.
  6. Transfer the mixture to the prepared casserole dish and spread it evenly.
  7. Sprinkle the remaining 1/2 cup cheddar cheese over the top.
  8. Bake uncovered for 25 to 30 minutes, until the edges bubble and the cheese melts.
  9. Add crispy fried onions, if desired, and bake for another 5 minutes.
  10. Let the casserole rest for 5 to 10 minutes before serving.

Notes

  1. Use fully cooked chicken and cooked rice for this recipe.
  2. Cut the broccoli into small, even florets so it cooks properly.
  3. Drain thawed frozen broccoli thoroughly before adding it.
  4. Freshly shredded cheddar melts more smoothly than packaged shredded cheese.
  5. Store leftovers in an airtight container in the refrigerator for up to 4 days.
  6. Add a small splash of milk before reheating to restore moisture.
