Description

This Chicken Fajita Burrito Bowl is an easy, balanced meal with seasoned chicken, sautéed peppers and onions, rice, and fresh toppings. Perfect for meal prep or a quick family dinner.

Ingredients

Scale
  • 1 ½ pounds chicken breast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 ¼ teaspoons garlic powder
  • 1 ¼ teaspoons ground cumin
  • 1 teaspoon brown sugar
  • 1 teaspoon dried oregano
  • 1 ½ teaspoons chili powder
  • 3 teaspoons paprika
  • 1 tablespoon tapioca starch
  • 3 bell peppers, sliced
  • ½ large red onion, sliced
  • 2 cups cilantro lime rice
  • 1 can black beans, drained and rinsed
  • 2 cups chopped lettuce
  • ½ cup pico de gallo
  • ½ cup chipotle aioli

Instructions

  1. Pound the chicken to an even thickness.
  2. Mix all seasonings with the tapioca starch.
  3. Coat the chicken evenly with the seasoning mixture.
  4. Heat olive oil in a skillet over medium heat and cook the chicken for 4–5 minutes per side.
  5. Remove the chicken from the skillet and slice if needed.
  6. Add peppers and onion to the same skillet and sauté until tender and lightly browned.
  7. Return the chicken to the skillet and cook for 1–2 minutes to combine flavors.
  8. Assemble bowls with rice or lettuce, chicken and vegetables, black beans, pico de gallo, and chipotle aioli.

Notes

  1. Great for meal prep and reheats well.
  2. Keep fresh toppings separate until serving.
  3. Swap chipotle aioli for lime crema or guacamole if desired.

Food safety: if you cook the chicken yourself, make sure it reaches an internal temperature of 165°F (74°C), as recommended by the USDA and Health Canada.
