Description

Chicken Fettuccine Alfredo is a creamy pasta dish that combines tender slices of chicken with rich Alfredo sauce and fettuccine noodles. Made with butter, cream, and Parmesan cheese, this indulgent Italian-American classic is comforting, flavorful, and perfect for a cozy dinner or special occasion. It’s simple to make and loved for its creamy texture and satisfying taste.

Ingredients

Scale
  • 12 oz fettuccine pasta

  • 2 boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • Salt and black pepper to taste

  • 3 tablespoons unsalted butter

  • 2 garlic cloves, minced

  • 1½ cups heavy cream

  • 1 cup freshly grated Parmesan cheese

  • Optional: ½ teaspoon Italian seasoning

  • Optional garnish: chopped parsley, extra Parmesan

Substitution Options:

  • Use milk or half-and-half for a lighter sauce

  • Replace chicken with shrimp, tofu, or vegetables

  • Add cooked mushrooms, spinach, or broccoli for variety

Instructions

  • Prepare Chicken:

    • Season chicken with salt, pepper, and optional Italian seasoning.

    • Heat olive oil in a pan over medium heat.

    • Cook chicken 6–7 minutes per side until golden and cooked through.

    • Let rest, then slice into thin strips.

  • Cook Pasta:

    • Boil salted water in a large pot.

    • Cook fettuccine until al dente (about 8–10 minutes).

    • Reserve 1 cup of pasta water. Drain pasta and set aside.

  • Make Alfredo Sauce:

    • Melt butter in a saucepan over medium heat.

    • Add garlic and sauté 30 seconds.

    • Pour in cream and simmer 2–3 minutes.

    • Stir in Parmesan cheese until smooth and creamy.

    • Add reserved pasta water if needed to loosen the sauce.

    • Season with salt and pepper.

  • Combine and Serve:

    • Toss cooked fettuccine with the sauce until coated.

    • Add sliced chicken on top or mix it in.

    • Garnish with parsley and extra Parmesan before serving.

Notes

For a lighter version, use milk instead of cream and reduce butter.

Avoid reheating on high heat to keep sauce from separating.

Leftovers last up to 3 days in the fridge but are best enjoyed fresh.

Freezing is not recommended due to sauce separation.
