Description

Chicken satay is a classic Southeast Asian dish consisting of marinated, skewered chicken grilled to perfection. Paired with a spicy peanut dipping sauce, this dish offers a perfect balance of savory, sweet, and spicy flavors. It’s simple to prepare, full of flavor, and perfect for any gathering.

Ingredients

Scale

For the Chicken Satay:

  • 4 boneless chicken thighs (or breasts, if preferred)

  • 3 tablespoons soy sauce

  • 1/4 cup coconut milk

  • 1 tablespoon red curry paste

  • 1 teaspoon turmeric

  • 2 cloves garlic, minced

  • 1 tablespoon fresh ginger, minced

  • 2 tablespoons lime juice

  • 1 tablespoon brown sugar

For the Spicy Peanut Dipping Sauce:

  • 1/2 cup peanut butter

  • 1/4 cup coconut milk

  • 1 tablespoon soy sauce

  • 1 tablespoon red curry paste

  • 1 tablespoon lime juice

  • 1 tablespoon brown sugar

  • 1/2 teaspoon chili flakes (adjust to taste)

Instructions

  • Prepare the Marinade for the Chicken: Mix soy sauce, coconut milk, red curry paste, turmeric, garlic, ginger, lime juice, and brown sugar in a bowl. Add the chicken pieces and toss to coat. Cover and refrigerate for 30 minutes to 2 hours.

  • Make the Peanut Sauce: In a saucepan, combine peanut butter, coconut milk, soy sauce, red curry paste, lime juice, and brown sugar. Heat over medium, stirring until smooth. Adjust with chili flakes for spiciness.

  • Grill the Chicken: Skewer the marinated chicken pieces and grill on medium-high heat for 3-4 minutes per side until fully cooked.

  • Serve: Remove chicken from skewers and serve with the peanut dipping sauce.

Notes

For a milder peanut sauce, reduce chili flakes and add more peanut butter.

Use chicken thighs for more tender meat, or substitute with tofu for a vegetarian version.

The peanut sauce can be made ahead and stored in the fridge.
