Description

Chicken Scampi with Garlic Parmesan Rice is a flavorful one-pan meal that brings tender, golden chicken together with creamy, garlicky rice. Inspired by Italian-American scampi-style cooking, this dish blends buttery garlic sauce, Parmesan cheese, and simple herbs into a cozy and satisfying dinner. It’s quick, comforting, and perfect for busy weeknights.

For the chicken:

  • 1 lb boneless, skinless chicken breasts or tenderloins (sliced thin)

  • 1 tablespoon olive oil

  • 1 tablespoon butter

  • Salt and black pepper, to taste

  • 1/2 teaspoon garlic powder

For the rice:

  • 1 tablespoon butter

  • 34 cloves garlic, minced

  • 1 cup long-grain white rice (rinsed)

  • 2 cups low-sodium chicken broth

  • 1/2 cup freshly grated Parmesan cheese

  • Optional: parsley or lemon zest for garnish


Instructions

Step 1 – Cook the chicken:

  1. Season sliced chicken with salt, pepper, and garlic powder.

  2. Heat oil and butter in a large skillet over medium heat.

  3. Cook chicken in batches until golden and cooked through. Set aside.

Step 2 – Make garlic rice:
4. In the same pan, add butter and minced garlic. Sauté for 30 seconds.
5. Add rinsed rice. Stir to coat with garlic and butter.
6. Pour in broth. Bring to a boil.
7. Cover, reduce heat, and simmer for 15–18 minutes until rice is tender.

Step 3 – Finish the dish:
8. Stir in Parmesan cheese. Adjust salt if needed.
9. Return the chicken to the pan and mix gently with rice.
10. Warm through for 2–3 minutes. Serve hot with herbs or extra cheese.

Notes

Use fresh garlic and cheese for best flavor.

Rinse rice to prevent it from getting sticky.

Add lemon zest, spinach, or peas for a twist.

Romano or Asiago can be used in place of Parmesan.
