Description

A comforting and creamy chicken tortellini soup, packed with tender chicken, delicious tortellini, and a rich broth. Perfect for cozy weeknights.


Ingredients

  • 1 lb. chicken breast
  • 1 bag of fresh or frozen cheese tortellini
  • 4 cups chicken broth
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 1 cup heavy cream (optional for a creamy version)
  • 12 cups fresh spinach (optional)
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp dried Italian seasoning
  • Fresh Parmesan cheese, for garnish

Instructions

  1. 1. Cook the chicken by sautéing in olive oil until golden brown, then shred it into bite-sized pieces.
  2. 2. In the same pot, sauté diced onion, carrots, celery, and minced garlic for about 5-7 minutes until softened.
  3. 3. Add chicken broth, salt, pepper, and Italian seasoning to the pot. Let it simmer for 10 minutes.
  4. 4. Add the shredded chicken back into the pot.
  5. 5. Drop in the tortellini and cook for 3-5 minutes, following package instructions.
  6. 6. For a creamy version, stir in heavy cream and cook for an additional 2-3 minutes.
  7. 7. Add spinach in the last minute of cooking for a fresh pop of color and nutrition.
  8. 8. Serve hot, garnished with freshly grated Parmesan cheese.
