Description

Soft and chewy Chocolate Chip Cherry Bars filled with juicy cherries and gooey chocolate chips.

Ingredients

Scale
  • ½ cup unsalted butter, melted
  • 1 cup light brown sugar, packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • ¼ teaspoon salt
  • ¾ to 1 cup semi-sweet chocolate chips
  • 1 cup fresh or frozen cherries

Instructions

  1. Preheat oven to 350°F and line an 8×8-inch baking pan with foil and cooking spray.
  2. Melt the butter in a microwave-safe bowl.
  3. Stir brown sugar into the melted butter until combined.
  4. Add the egg and vanilla extract and mix well.
  5. Stir in the flour and salt until just combined without overmixing.
  6. Fold in the chocolate chips and cherries evenly.
  7. Spread the batter into the prepared pan and smooth the top.
  8. Bake for 27 to 32 minutes until the edges are lightly golden and the center is set.
  9. Cool the bars for at least 20 minutes before slicing and serving.

Notes

  1. Fresh or frozen cherries both work well in this recipe.
  2. Pat frozen cherries dry before adding them to the batter.
  3. Do not overmix the batter or the bars may turn tough.
  4. Store leftovers in an airtight container for up to one week.
