- 1/2 cup unsalted butter, melted
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups finely shredded zucchini, squeezed dry
- 1 cup semi-sweet chocolate chips
- Optional chopped walnuts or pecans
- Optional flaky salt
Instructions
- Preheat oven to 350°F and prepare a 9×13-inch baking pan
- Whisk flour, baking soda, salt, and cinnamon together
- Mix melted butter, brown sugar, and granulated sugar until smooth
- Add egg and vanilla extract and stir well
- Fold in shredded zucchini
- Add dry ingredients and mix until combined
- Stir in chocolate chips and optional nuts
- Spread batter evenly in pan
- Bake for 20 to 25 minutes
- Cool completely before slicing into bars
Notes
- Squeeze zucchini well before mixing
- Do not overmix the batter
