Description
Chocolate Covered Strawberry Cookies are a delicious and easy strawberry cake mix cookie dipped in chocolate.
Ingredients
1 Strawberry cake mix
1/3 cup vegetable oil
1 teaspoon vanilla
2 eggs
Chocolate chips or chocolate candy melts
sprinkles, if desired
Instructions
1. Heat oven to 350°F (325°F for dark or nonstick pans). In large bowl, mix cake mix, oil, vanilla and eggs with spoon until dough forms.
2. Refrigerate dough 15 to 30 minutes. Shape dough into 1-inch balls.
3. On ungreased cookie sheets, place balls about 2 inches apart. Put in oven for 9-12 minutes or until they look dry on top and are just beginning to turn golden on the bottom.
4. Cool 1 minute; remove from cookie sheets to cooling racks. Cool completely, about 30 minutes.
5. Drizzle melted chocolate on one side or dip into chocolate and add sprinkles if desired.
Notes
For more chocolate flavor, dip half the cookie instead of drizzling.
