Description

Warm cinnamon roasted peaches with honey mascarpone whipped cream make an easy gluten-free dessert for two.


Ingredients

  • 2 ripe but firm peaches, halved and pitted
  • 2 tablespoons butter, melted
  • 1 tablespoon honey, for the peaches
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup cold heavy cream or whipping cream
  • 1/4 cup mascarpone cheese
  • 1 tablespoon honey, for the whipped cream
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons crystallized ginger, chopped, optional

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Arrange the peach halves cut side up in a small baking dish.
  3. In a small bowl, stir together the melted butter, honey, and cinnamon until smooth.
  4. Pour the cinnamon honey butter over the peaches, coating the cut sides well.
  5. Roast the peaches for 20 minutes, or until tender and juicy.
  6. Meanwhile, add the cold heavy cream, mascarpone cheese, honey, and vanilla extract to a mixing bowl.
  7. Beat with an electric mixer on low speed, then increase to high and whip until stiff peaks form.
  8. Plate the warm peaches and spoon the cinnamon butter sauce from the baking dish over the top.
  9. Serve each portion with a large dollop of honey mascarpone whipped cream.
  10. Top with chopped crystallized ginger, if desired, and serve immediately.

Notes

  1. Use ripe but firm peaches so they soften without falling apart.
  2. Keep the cream and mascarpone cold for the thickest whipped topping.
  3. Add a tiny pinch of salt to the cinnamon butter for deeper flavor.
  4. Store peaches and whipped cream separately in the refrigerator.
