Description
Warm cinnamon roasted peaches with honey mascarpone whipped cream make an easy gluten-free dessert for two.

- 2 ripe but firm peaches, halved and pitted
- 2 tablespoons butter, melted
- 1 tablespoon honey, for the peaches
- 1/2 teaspoon ground cinnamon
- 1/2 cup cold heavy cream or whipping cream
- 1/4 cup mascarpone cheese
- 1 tablespoon honey, for the whipped cream
- 1/2 teaspoon vanilla extract
- 2 tablespoons crystallized ginger, chopped, optional
Instructions
- Preheat the oven to 375 degrees F.
- Arrange the peach halves cut side up in a small baking dish.
- In a small bowl, stir together the melted butter, honey, and cinnamon until smooth.
- Pour the cinnamon honey butter over the peaches, coating the cut sides well.
- Roast the peaches for 20 minutes, or until tender and juicy.
- Meanwhile, add the cold heavy cream, mascarpone cheese, honey, and vanilla extract to a mixing bowl.
- Beat with an electric mixer on low speed, then increase to high and whip until stiff peaks form.
- Plate the warm peaches and spoon the cinnamon butter sauce from the baking dish over the top.
- Serve each portion with a large dollop of honey mascarpone whipped cream.
- Top with chopped crystallized ginger, if desired, and serve immediately.
Notes
- Use ripe but firm peaches so they soften without falling apart.
- Keep the cream and mascarpone cold for the thickest whipped topping.
- Add a tiny pinch of salt to the cinnamon butter for deeper flavor.
- Store peaches and whipped cream separately in the refrigerator.
