Description

These cinnamon roll cookies blend the rich cinnamon flavor of classic rolls with the convenience of soft, chewy cookies, topped with smooth cream cheese frosting.


Ingredients

2 1/2 cups All-Purpose Flour

1 1/2 cups Cake Flour

2 tsp corn starch

1 tsp baking soda

1 tsp baking powder

1 tsp salt

1 cup cold unsalted butter, cubed

1 1/4 cup granulated sugar

2 large eggs

2 large egg yolks

1 tsp vanilla extract

1 cup packed brown sugar

6 Tbsp softened butter

2 Tbsp cinnamon

8 oz cream cheese, softened

1/2 cup butter, softened

2 1/2 cups confectioners sugar

1 tsp vanilla extract

1/2 tsp salt


Instructions

1. Preheat oven to 400°F.

2. Make cinnamon sugar filling by mixing brown sugar, butter, and cinnamon.

3. Combine dry ingredients in a bowl.

4. Cream butter and sugar together.

5. Add eggs, yolks, and vanilla.

6. Gradually add dry ingredients.

7. Press dough into rectangle and spread filling evenly.

8. Roll tightly, slice into 10–12 cookies.

9. Bake 9–11 minutes until golden.

10. Cool and frost with cream cheese frosting.

Notes

If cookies are smaller, check at 8 minutes.

Seal filling tightly to prevent leaks.

Store in fridge for up to 5 days.
