Description

Soft and moist cinnamon peach quick bread made with fresh peaches, warm cinnamon, and almond extract.


Ingredients

Scale
  • 2 large peaches, peeled and chopped
  • 1/2 tablespoon lemon juice
  • 3/4 teaspoon almond extract
  • 210 g all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 to 1 1/2 teaspoons cinnamon
  • 1/8 teaspoon salt
  • 2 large eggs
  • 105 g granulated sugar
  • 115 g butter, melted and cooled
  • 120 g milk

Instructions

  1. Preheat oven to 350°F and prepare loaf pan.
  2. Peel and chop peaches, then mix with lemon juice and almond extract.
  3. Whisk flour, baking powder, cinnamon, and salt.
  4. Whisk eggs and sugar, then add milk and melted butter.
  5. Combine wet and dry ingredients until just mixed.
  6. Fold in peaches gently.
  7. Transfer batter to loaf pan and spread evenly.
  8. Bake 44 to 48 minutes until a toothpick comes out clean.
  9. Cool in pan for 30 minutes.
  10. Transfer to a wire rack and cool completely before slicing.

Notes

  1. Use ripe but firm peaches.
  2. For stronger flavor use 1 1/2 teaspoons cinnamon.
  3. Store refrigerated up to 1 week.
  4. Freeze up to 3 months.
