Description

These Cinnamon Sugar French Toast Muffins combine the best of two breakfast favorites—fluffy muffins and cinnamon-coated French toast! They have a soft, buttery texture with a delicious cinnamon sugar coating, making them perfect for a cozy morning treat or brunch. Serve them warm with a drizzle of maple syrup!

Ingredients

Scale
For the Muffins:
  • 2 cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ cup unsalted butter, melted
  • ⅔ cup granulated sugar
  • 2 large eggs
  • 1 cup buttermilk
  • 1 tsp vanilla extract
For the Cinnamon Sugar Coating:
  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar
  • 1 tsp ground cinnamon

Instructions

Step 1: Prepare the Muffins

  1. Preheat oven to 350°F (175°C). Grease or line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, whisk together melted butter, sugar, eggs, buttermilk, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Do not overmix.
  5. Divide the batter evenly among the 12 muffin cups, filling them about ¾ full.

Step 2: Bake the Muffins

  1. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.

Step 3: Coat with Cinnamon Sugar

  1. In a small bowl, mix granulated sugar and cinnamon.
  2. Dip each slightly warm muffin into the melted butter, then roll it in the cinnamon sugar mixture to coat evenly.
  3. Serve warm with maple syrup or enjoy as-is!

Notes

  • For extra moisture, substitute Greek yogurt for buttermilk.
  • Store muffins in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
  • For a richer flavor, add a pinch of nutmeg or drizzle with a cream cheese glaze.
