Description

Soft cinnamon cookies packed with zucchini, carrots, and pecans for a moist and flavorful treat.


Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3/4 cup butter
  • 2/3 cup granulated sugar
  • 2/3 cup brown sugar
  • 1 large egg
  • 1 cup shredded zucchini
  • 1/2 cup shredded carrots
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 350°F and prepare baking sheet
  2. Mix flour, baking soda, salt, and cinnamon
  3. Cream butter and sugars until smooth
  4. Add egg and mix well
  5. Combine dry ingredients with wet mixture
  6. Fold in zucchini, carrots, and pecans
  7. Drop dough onto baking sheet
  8. Bake for 13 to 15 minutes until golden
  9. Cool before serving

Notes

  1. Squeeze moisture from zucchini
  2. Do not overmix dough
  3. Do not overbake cookies
  4. Toast pecans for better flavor
