Description

Classic Apricot Jam made with ripe apricots, sugar, and lemon juice. A traditional homemade preserve without added pectin.


Ingredients

Scale
  • 2.5 kg fresh apricots, prepared weight
  • 1/4 cup water
  • 1/4 cup fresh lemon juice
  • 1.8 kg granulated sugar

Instructions

  1. Wash, halve, and pit the apricots.
  2. Place apricots, water, and lemon juice in a large saucepan.
  3. Simmer for 10 to 15 minutes until fruit softens.
  4. Blend if a smoother texture is desired.
  5. Add sugar and stir until completely dissolved.
  6. Bring mixture to a steady boil.
  7. Cook uncovered, stirring frequently.
  8. Skim foam from the surface as needed.
  9. Test for setting point using a chilled plate or thermometer at 104°C (220°F).
  10. Rest jam for 10 minutes.
  11. Ladle into sterilized jars.
  12. Seal immediately and cool completely before storage.

Notes

  1. Use ripe or slightly underripe apricots for best results.
  2. Do not reduce the sugar amount.
  3. Use freshly squeezed lemon juice.
  4. Store unopened jars in a cool dark place for up to one year.
  5. Refrigerate after opening.
