Description

Classic Tiramisu Recipe made with homemade ladyfingers, rich mascarpone cream, and espresso layered into an authentic Italian dessert.


Ingredients

Scale
  • 1/2 cup egg whites
  • 1/4 cup granulated sugar
  • 1/3 cup egg yolks
  • 1/4 cup granulated sugar
  • 3/4 cup all-purpose flour
  • Powdered sugar for dusting
  • 1/2 cup egg yolks
  • 1/2 cup granulated sugar
  • 3/4 cup egg whites
  • 1/2 cup + 1 tablespoon granulated sugar
  • 26 ounces mascarpone cheese
  • 3/4 cup strong brewed coffee cooled
  • 12 tablespoons coffee liqueur optional
  • Unsweetened cocoa powder for dusting

Instructions

  1. Preheat oven to 350°F and line baking sheets with parchment paper
  2. Beat egg whites with sugar until stiff glossy peaks form
  3. Whisk egg yolks with sugar until pale and thick then fold into egg whites
  4. Sift flour over mixture and fold gently then pipe strips onto baking sheets and dust with powdered sugar
  5. Bake ladyfingers for 12 to 15 minutes until lightly golden and cool completely
  6. Whisk egg yolks with sugar over simmering water until thick and pale then cool slightly
  7. Beat egg whites with sugar to stiff peaks and stir mascarpone until smooth
  8. Fold yolk mixture into mascarpone then gently fold in whipped egg whites
  9. Dip ladyfingers quickly in coffee mixture and arrange in baking dish
  10. Spread half of mascarpone cream over layer then repeat layers
  11. Refrigerate at least 6 hours or overnight then dust with cocoa powder before serving

Notes

  1. Use room temperature eggs and mascarpone
  2. Dip ladyfingers quickly to prevent sogginess
  3. Use pasteurized eggs if preferred
  4. Store covered in refrigerator up to 3 days
  5. Chill overnight for best flavor
