Description

Creamy Coconut Lime Chicken cooked in one skillet with pan-seared chicken breasts finished in a rich coconut milk lime sauce.


Ingredients

  • 2 lb boneless skinless chicken breasts
  • 1/4 cup all-purpose flour
  • 1/4 cup chopped cilantro
  • 2 tablespoons coconut oil
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1 cup coconut milk
  • 2/3 cup chicken broth
  • 1 tablespoon brown sugar
  • 2 limes
  • Salt and pepper to taste
  • 1 green onion, chopped

Instructions

  1. Preheat oven to 375°F.
  2. Heat coconut oil and olive oil in a large oven-safe skillet over medium heat.
  3. Combine flour and cilantro, then coat each chicken breast.
  4. Pan-sear chicken for 3 to 4 minutes per side until lightly browned.
  5. Add garlic and cook for 30 seconds.
  6. Mix coconut milk, chicken broth, brown sugar, and juice from one lime.
  7. Pour sauce over chicken and transfer skillet to oven.
  8. Bake for 10 to 15 minutes until chicken reaches 165°F.
  9. Finish with remaining lime juice, salt, pepper, cilantro, and green onions.
