- 1/2 cup all-purpose flour
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 1/2 cup low-sodium chicken broth
- 2 tablespoons capers, rinsed
- Fresh parsley
- Lemon slices
Instructions
- Season cod with salt and pepper.
- Dredge cod lightly in flour.
- Heat olive oil and 1 tablespoon butter in a skillet.
- Cook cod 3 to 4 minutes per side and remove.
- Sauté garlic briefly in the same skillet.
- Add lemon juice and chicken broth.
- Stir in capers and simmer.
- Whisk in remaining butter.
- Return cod to skillet and spoon sauce over.
- Garnish with parsley and lemon slices.
