Description

Cold beet appetizer made with marinated beets, feta cheese, balsamic vinegar, and fresh herbs, served chilled.


Ingredients

Scale
  • 3 medium cooked beets, peeled
  • 9 ounces feta cheese or bryndza, crumbled
  • Fresh herbs such as dill, parsley, or chives
  • 4 tablespoons balsamic vinegar
  • 34 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 34 garlic cloves, finely minced

Instructions

  1. Cut the cooked beets into medium cubes or wedges and place them in a mixing bowl
  2. Whisk together balsamic vinegar, olive oil, lime juice, and minced garlic
  3. Pour the marinade over the beets and toss gently
  4. Cover and refrigerate for at least 30 minutes
  5. Add crumbled feta cheese and mix gently
  6. Sprinkle with fresh herbs and serve chilled

Notes

  1. Reduce garlic to 2 cloves for a milder flavor
  2. Goat cheese may replace feta for a creamier texture
  3. Store leftovers in the refrigerator for up to 2 days
