Description

Cookie butter cookies are soft, giant, gooey, and packed with plenty of creamy Biscoff flavor.


Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 3/4 cup cake flour
  • 2 tsp. cornstarch
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup unsalted butter, cold, cubed
  • 1/2 cup creamy cookie butter
  • 3/4 cup brown sugar, packed
  • 1/4 cup sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 Tbsp. cookie butter emulsion
  • 1 tsp. vanilla extract
  • 1 1/2 cups chocolate chips
  • 10 Biscoff cookies, crushed

Instructions

  1. Preheat the oven to 375°F and line baking sheets with parchment or silicone mats.
  2. Whisk together flours, cornstarch, baking powder, baking soda, and salt.
  3. Cream butter, cookie butter, and sugars until combined.
  4. Add egg, egg yolk, cookie butter emulsion, and vanilla; mix.
  5. Add dry ingredients, then chocolate chips and crushed cookies.
  6. Shape into 8 large dough balls using the pull-apart method.
  7. Bake 10–12 minutes until edges are golden.
  8. Use a round cutter to shape cookies while warm.
  9. Cool 15 minutes on sheet, then transfer to a rack. Drizzle with cookie butter if desired.

Notes

  1. Store cookies in an airtight container for several days.
  2. Freeze baked cookies or dough balls for later.
