Description

A light and fluffy baked cottage cheese breakfast soufflé with berries, gently sweetened and perfect for a warm, protein-rich morning meal.


Ingredients

  • Pressed cottage cheese
  • Eggs, separated
  • Cornstarch
  • Granulated sugar
  • Salt
  • Vanilla extract
  • Berries
  • Sweetened condensed milk or syrup

Instructions

  1. Preheat the oven to 350°F and line the baking dish with parchment paper.
  2. Blend cottage cheese, egg yolks, cornstarch, vanilla, and half the salt until smooth.
  3. Beat egg whites with remaining salt, add sugar, and whip until stiff peaks form.
  4. Fold egg whites gently into the cottage cheese mixture.
  5. Transfer batter to the dish, add berries, and bake until set and lightly golden.

Notes

  1. Use well-drained cottage cheese for best texture.
  2. Sugar can be replaced with honey or a sugar-free sweetener.
  3. Store leftovers in the refrigerator for up to two days.
