Description

Cowboy Butter Lemon Chicken with bowtie pasta and broccoli is a quick one pan dinner with juicy chicken, lemon garlic butter sauce, herbs, and Parmesan cheese.


Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil
  • 6 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 1/2 teaspoon crushed red pepper flakes optional
  • 1 teaspoon Dijon mustard
  • Juice and zest of 1 lemon
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh chives chopped
  • 2 cups broccoli florets
  • 12 ounces bowtie pasta
  • 1/2 cup reserved pasta water
  • 1/2 cup grated Parmesan cheese plus extra for topping

Instructions

  1. Cook the bowtie pasta according to the package instructions and add broccoli during the final two to three minutes then drain while reserving half cup pasta water
  2. Season chicken with Cajun seasoning garlic powder smoked paprika salt and black pepper
  3. Heat olive oil in a large skillet over medium high heat and cook chicken for about five to seven minutes until golden and cooked through then remove and set aside
  4. Melt butter in the same skillet over medium heat and add garlic and crushed red pepper flakes then cook one minute until fragrant
  5. Stir in Dijon mustard lemon juice and lemon zest and cook for one to two minutes
  6. Return cooked chicken to the skillet then add cooked pasta and broccoli
  7. Toss everything together while slowly adding reserved pasta water until the sauce coats the pasta evenly
  8. Stir in Parmesan cheese parsley and chives then serve hot with extra Parmesan if desired

Notes

  1. Use boneless skinless chicken breasts for tender juicy results
  2. Avoid overcrowding the pan so the chicken browns properly
  3. Cook pasta and broccoli until just al dente
  4. Adjust crushed red pepper flakes depending on preferred heat level
