Description

This Cowboy Queso is a creamy Velveeta-based dip loaded with seasoned ground beef, Rotel tomatoes, black beans, and beer, perfect for parties and game day.


Ingredients

Scale
  • 1/2 lb ground beef
  • Salt and black pepper, to taste
  • Pinch of red pepper flakes
  • 3/4 cup pale ale beer
  • 1/2 cup pepper jack cheese, shredded
  • 16 oz Velveeta cheese, cubed
  • 14.5 oz can Rotel tomatoes, partially drained
  • 1 cup black beans, drained and rinsed
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Brown ground beef in a skillet over medium-high heat and drain grease
  2. Season beef with salt, pepper, and red pepper flakes
  3. Add beer and simmer until slightly reduced
  4. Lower heat and add Velveeta and pepper jack cheese
  5. Stir until cheese is fully melted and smooth
  6. Stir in black beans, red onion, and cilantro
  7. Add Rotel tomatoes and heat through before serving

Notes

  1. Chicken or beef broth can replace beer
  2. Root beer or cola also work as substitutes
  3. Serve with tortilla chips or pretzels
