Description

Flavor-packed Cowboy Stir Fry cooked on a Blackstone griddle with smoked sausage, crispy potatoes, and colorful vegetables for a quick and hearty dinner.


Ingredients

  • 1 lb smoked sausage
  • 2 medium Yukon Gold potatoes
  • 2 medium zucchini
  • 1 medium onion
  • 1 medium red bell pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 tbsp cooking oil

Instructions

  1. Preheat a Blackstone griddle or large skillet over medium-high heat for 3 to 5 minutes and add 1 tablespoon oil
  2. Add diced Yukon Gold potatoes and season with garlic powder onion powder smoked paprika salt and black pepper then cook 10 to 12 minutes stirring occasionally
  3. Push potatoes to one side of the griddle and add remaining oil then cook sliced smoked sausage for about 5 minutes until browned
  4. Add onion red bell pepper and zucchini then stir and cook 5 to 7 minutes until vegetables are tender but crisp
  5. Taste and adjust seasoning then remove from heat and serve hot

Notes

  1. Store leftovers in an airtight container in the refrigerator for up to 3 days
  2. Reheat in a skillet with a small splash of water or oil to prevent drying out
