Description

A rich and creamy slow cooker soup that captures all the flavors of a classic cheeseburger—juicy ground beef, melted cheddar, tender potatoes, and hearty veggies. This hands-off recipe is comforting, family-approved, and perfect for busy nights or game-day gatherings.


Ingredients

  • 1 lb (450 g) ground beef

  • 1 small onion, diced (100 g)

  • 2 garlic cloves, minced (6 g)

  • 4 cups (950 ml) low-sodium beef broth

  • 3 cups (400 g) potatoes, diced

  • 2 cups (250 g) carrots, diced

  • 2 cups (200 g) celery, diced

  • 1 can (14.5 oz / 411 g) diced tomatoes, undrained

  • 1 tbsp (15 ml) Worcestershire sauce

  • 1 tsp (1 g) dried basil

  • 1 tsp (1 g) dried oregano

  • Salt and pepper, to taste

  • 2 cups (200 g) shredded cheddar cheese

  • 1 cup (240 ml) heavy cream

Topping Options

  • Diced tomatoes

  • Green onions

  • Crispy bacon bits

  • Extra shredded cheese

  • Sour cream


Instructions

  • In a skillet over medium heat, cook ground beef until browned (6–8 minutes). Drain grease and transfer to crockpot.

  • In the same skillet, sauté onion and garlic for 2–3 minutes. Add to crockpot.

  • Add beef broth, potatoes, carrots, celery, canned tomatoes with juices, Worcestershire sauce, basil, oregano, salt, and pepper. Stir well.

  • Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until vegetables are tender.

  • About 30 minutes before serving, stir in shredded cheddar cheese and heavy cream. Cook until the cheese melts and the soup turns creamy.

  • Taste, adjust seasoning, and serve hot with desired toppings.

Notes

For a thicker soup, mash some of the potatoes before adding cheese and cream.

Add red pepper flakes or hot sauce for spice.

Shred your own cheese for smoother melting.

Store leftovers in the fridge up to 3 days or freeze (up to 2 months); reheat gently with extra cream or broth.

Swap ground beef for ground turkey or chicken for a lighter version.
