Ingredients

Scale

For the Dough:

  • 2 1/4 tsp instant dry yeast

  • 6 oz warm water

  • 1/4 cup granulated sugar

  • 2 tbsp browned butter

  • 1 large egg

  • 1 tbsp dry milk powder

  • 1 tsp salt

  • 2/3 cup pumpkin puree

  • 1 tbsp pumpkin pie spice

  • 3 1/4 to 3 3/4 cups all-purpose flour

For the Filling:

  • 3/4 cup brown sugar

  • 1 1/2 tsp ground cinnamon

  • 1 1/2 tsp pumpkin pie spice

  • 6 tbsp browned butter

For the Frosting:

  • 4 oz cream cheese, softened

  • 2 oz browned butter, softened

  • 1 tbsp vanilla extract

  • 2 tbsp heavy cream

  • 1 1/2 cups powdered sugar

Instructions

  1. Brown 15 tbsp of butter in total. Chill a portion overnight for the frosting.

  2. In a mixer, dissolve yeast in warm water and let sit for 5 minutes.

  3. Add sugar, browned butter, egg, dry milk, salt, pumpkin puree, pumpkin pie spice, and 3 1/4 cups flour.

  4. Mix and knead for 8 minutes. Add more flour if needed until dough is soft and non-sticky.

  5. Lightly warm oven, turn off heat, and let dough rise in a greased bowl covered for 45–60 minutes.

  6. Punch down dough and roll into a 16×14 inch rectangle. Brush with browned butter and sprinkle with the sugar-spice filling.

  7. Roll tightly and cut into 12 rolls. Place in greased 9×13 baking dish.

  8. Let rise for 30 minutes or refrigerate overnight. Bring to room temp 45 minutes before baking.

  9. Bake at 350°F for 22–27 minutes.

  10. Mix all frosting ingredients and frost rolls once slightly cooled.
