Description

This Pumpkin Cobbler is a self-saucing fall dessert made with spiced pumpkin cake on top and a gooey caramel sauce underneath. Simple to prepare and packed with warm autumn spices, it’s the perfect cozy treat for cool evenings, holiday gatherings, or comforting weeknight indulgence.

Ingredients

Scale

Pumpkin Cobbler:

  • 1 1/4 cups all-purpose flour

  • 2 tsp baking powder

  • 1/4 tsp salt

  • 3/4 cup granulated sugar

  • 1 tsp ground cinnamon

  • 1/2 tsp ground nutmeg

  • 1/4 tsp ground cloves

  • 1/4 tsp ground ginger

  • 1 cup canned pumpkin (not pumpkin pie filling)

  • 1/4 cup vegetable oil

  • 1 tsp vanilla extract

Topping:

  • 1 cup brown sugar

  • 1/2 tsp ground cinnamon

  • 1 1/2 cups hot water

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.

  2. In a large bowl, whisk together flour, baking powder, salt, granulated sugar, cinnamon, nutmeg, cloves, and ginger.

  3. Stir in pumpkin, oil, and vanilla extract until just combined. Batter will be thick.

  4. Spread batter evenly in the prepared baking dish.

  5. In a small bowl, mix brown sugar and cinnamon. Sprinkle over the batter.

  6. Slowly pour hot water over the top without stirring (pour over a spoon to avoid disturbing layers).

  7. Bake uncovered for 50–55 minutes until cake is puffed and golden and sauce is bubbling underneath.

  8. Let cool 5–10 minutes before serving warm.

Notes

Use pumpkin purée, not pie filling.

For deeper flavor, swap half of the brown sugar with dark brown sugar.

To prevent disturbing the topping, pour hot water slowly over the back of a spoon.

Serve warm for best texture and flavor.

Reheat leftovers gently in the microwave or oven.
