Description

Crack Chicken Noodle Soup combines tender shredded chicken, egg noodles, ranch seasoning, cream cheese, cheddar, and smoky bacon in a rich, comforting broth.


Ingredients

  • pounds boneless, skinless chicken breasts, cooked and shredded
  • 8 ounces cream cheese, softened and cut into cubes
  • 1 packet ranch seasoning mix, about 1 ounce
  • 4 cups low-sodium chicken broth, plus more as needed
  • 8 ounces wide egg noodles
  • 1 cup shredded sharp cheddar cheese
  • ½ cup cooked bacon, crumbled
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes, optional
  • Sliced green onions or chopped parsley, optional for serving

Instructions

  1. Shred the cooked chicken, cube the softened cream cheese, shred the cheddar, and crumble the bacon.
  2. Add the chicken broth, cream cheese, ranch seasoning, black pepper, and optional red pepper flakes to a large Dutch oven over medium heat.
  3. Whisk frequently until the cream cheese melts and the broth becomes smooth.
  4. Stir in the shredded chicken and bring the soup to a gentle simmer.
  5. Add the egg noodles and cook according to the package directions, usually 6 to 8 minutes, stirring often.
  6. Reduce the heat to low, then stir in the cheddar and most of the bacon until the cheese melts.
  7. Thin with extra warm broth if needed, taste for seasoning, and serve with the reserved bacon and optional green onions or parsley.

Notes

  1. Use low-sodium chicken broth because the ranch seasoning, bacon, and cheddar already contain salt.
  2. For a spicier soup, add the optional red pepper flakes or a dash of hot sauce.
  3. For make-ahead preparation, cook and store the noodles separately so they do not absorb too much broth.
  4. Refrigerate leftovers in an airtight container for up to 3 days or freeze the soup without noodles for up to 2 months.
