Description

Cranberry Apple Twice-Baked Sweet Potatoes combine naturally sweet roasted sweet potatoes with tender apples, tart dried cranberries, crunchy pecans, butter, and warm spices for an easy holiday side dish.


Ingredients

  • 2 medium sweet potatoes
  • 2 medium apples, peeled, cored, and diced into 1-inch cubes
  • 3 tablespoons coconut sugar or brown sugar
  • 1/4 cup chopped pecans
  • 1/2 cup dried cranberries
  • 2 tablespoons butter
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat the oven to 425°F.
  2. Scrub and thoroughly dry the sweet potatoes, then prick them all over with a fork.
  3. Arrange the sweet potatoes in a baking dish and roast for 40 to 45 minutes, or until very tender.
  4. While the sweet potatoes roast, melt the butter in a medium skillet over medium-high heat.
  5. Add the diced apples, dried cranberries, coconut sugar, cinnamon, and nutmeg.
  6. Cook for 5 to 7 minutes, stirring occasionally, until the apples soften but still hold their shape.
  7. Stir in the chopped pecans and cook for 1 additional minute.
  8. Remove the sweet potatoes from the oven and carefully slice each one open.
  9. Fluff the sweet potato flesh gently with a fork while keeping the skins intact.
  10. Spoon the warm apple-cranberry filling generously over each sweet potato.
  11. Return the filled sweet potatoes to the oven and bake for 10 more minutes, or until heated through and lightly bubbly.
  12. Serve warm.

Notes

  1. Use fresh apples and dried cranberries for the best flavor and texture.
  2. Honeycrisp, Gala, Fuji, or Pink Lady apples work especially well.
  3. Toast the pecans before adding them for a deeper, nuttier flavor.
  4. Store leftovers in an airtight container in the refrigerator for up to 4 days.
  5. Reheat in a 350°F oven for about 15 minutes or microwave individual portions until warm.
