Description

Cream Cheese Chicken is a quick skillet dinner made with tender chicken breasts, cream cheese, garlic, onion, broth, and Italian seasoning in a creamy herb sauce.


Ingredients

  • 8 ounces cream cheese, softened and cut into pieces
  • 2 large chicken breasts
  • 1/2 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1/2 medium onion, chopped
  • 3 cloves garlic, minced
  • 3/4 cup chicken broth, plus more as needed
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes
  • Fresh chopped parsley, optional, to taste

Instructions

  1. Soften the cream cheese until very soft, then cut it into smaller pieces and set it aside.
  2. Cut each chicken breast in half lengthwise to make 4 thinner cutlets.
  3. Season both sides of the chicken with garlic powder, salt, and black pepper.
  4. Heat the butter and olive oil in a large skillet over medium-high heat.
  5. Add the chicken and cook for 5 to 6 minutes per side, or until golden and cooked through to 165°F. Transfer the chicken to a plate.
  6. Reduce the heat to medium, then add the chopped onion to the skillet.
  7. Cook the onion for 5 to 7 minutes, stirring often, until softened and lightly browned.
  8. Stir in the minced garlic and cook for 30 seconds.
  9. Add the chicken broth, softened cream cheese, Italian seasoning, and crushed red pepper flakes.
  10. Stir until the cream cheese melts and the sauce turns smooth.
  11. Return the chicken to the skillet and spoon the sauce over the top.
  12. Warm the chicken through, adding a splash of extra broth if the sauce gets too thick.
  13. Taste and add more salt and pepper if needed.
  14. Sprinkle with fresh parsley, if desired, and serve immediately.

Notes

  1. Use softened cream cheese for the smoothest sauce.
  2. Slice the chicken into thin cutlets so it cooks quickly and evenly.
  3. Add extra chicken broth one tablespoon at a time if the sauce becomes too thick.
  4. Reheat leftovers gently over low heat to keep the sauce creamy.
