Description

Creamy Chicken Pasta with tender chicken, rich garlic cream sauce, and perfectly cooked pasta. A comforting and versatile family dinner.


Ingredients

  • 1 large boneless skinless chicken breast
  • Salt and pepper to taste
  • 2 teaspoons Italian seasoning
  • 1/4 cup flour
  • 12 tablespoons olive oil
  • 1/2 cup dry white wine
  • 3 tablespoons butter
  • 3 cloves garlic minced
  • 3 tablespoons flour
  • 1 1/4 cups half and half
  • 3/4 cup chicken broth
  • 1/2 chicken bouillon cube
  • 1/3 cup Parmesan cheese grated
  • 1/3 cup Romano cheese grated
  • 1/2 pound pasta
  • 1 cup reserved pasta water optional
  • 1 lemon optional
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil
  • 1/2 teaspoon mustard powder
  • 1/2 teaspoon parsley
  • 1/8 teaspoon smoked paprika

Instructions

  1. Combine half and half, chicken broth, and seasonings in a measuring cup and set aside.
  2. Slice chicken lengthwise, pound to even thickness, pat dry, season, and dredge lightly in flour.
  3. Heat olive oil in skillet and sear chicken 3-4 minutes per side until golden. Rest and slice.
  4. Deglaze skillet with white wine and reduce by half.
  5. Add butter and garlic, cook 1 minute. Stir in flour and cook 2 minutes.
  6. Gradually whisk in broth and cream mixture. Add bouillon and simmer gently.
  7. Boil salted water and cook pasta until al dente. Reserve 1 cup pasta water and drain.
  8. Stir grated cheeses into sauce until smooth.
  9. Add pasta and sliced chicken to skillet and toss to combine.
  10. Add reserved pasta water as needed for desired consistency. Finish with lemon juice if desired.

Notes

  1. Use freshly grated cheese for best melting and flavor.
  2. Keep sauce heat low when adding cheese to prevent separation.
  3. Reserve pasta water to adjust sauce consistency.
  4. Store leftovers refrigerated up to 3 days or freeze up to 3 months.
