Description

This creamy Chicken Gnocchi Soup is the ultimate comfort food—soft gnocchi, shredded chicken, garlic, kale, and parmesan come together in a velvety, flavour-packed broth. Ready in under 30 minutes, it’s perfect for cosy nights, meal prep, or quick family dinners.


Ingredients

  • 1 (16 oz) package potato gnocchi

  • 2 cups shredded cooked chicken breasts

  • 2 tbsp unsalted butter

  • 68 garlic cloves, minced

  • 4 tbsp all-purpose flour

  • 2 tsp On Everything All-Purpose Blend (or Italian seasoning)

  • 1 tsp sea salt

  • 5 cups chicken stock or broth

  • 1½ cups heavy cream

  • 2 cups chopped kale, de-stemmed

  • 1 cup freshly grated Parmesan cheese


Instructions

  • In a medium Dutch oven over medium-high heat, melt the butter.

  • Add garlic and sauté for 1–2 minutes until fragrant.

  • Stir in the flour, seasoning, and salt to form a roux.

  • Slowly whisk in the chicken stock, stirring until slightly thickened.

  • Add the heavy cream, kale, chicken, and gnocchi.

  • Simmer for 10–12 minutes, until the gnocchi floats and is tender.

  • Stir in parmesan and let melt fully.

  • Simmer another 1–2 minutes, then remove from heat.

  • Serve hot with bread or salad.

Notes

Use rotisserie chicken for a quick shortcut.

Spinach or Swiss chard can replace kale.

Add a splash of broth or cream when reheating.

Let simmer longer for a thicker consistency.

Can be made dairy-free with plant-based swaps.
