Description

Creamy Crack Chicken Soup is a rich, low carb, high protein soup made with shredded chicken, crispy bacon, cream cheese, cheddar, and spinach. This keto-friendly comfort dish comes together in just 27 minutes and makes a satisfying easy chicken dinner.

Ingredients

Scale
  • 4 slices bacon, diced
  • 1 tablespoon butter
  • 1 white onion, diced
  • 3 cloves garlic, minced
  • 5 cups low-sodium chicken broth
  • 3 bay leaves
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon dried chives
  • Salt and black pepper to taste
  • 4 cups cooked chicken, shredded
  • 8 ounces cream cheese
  • 1 cup cheddar cheese, grated
  • 4 cups baby spinach
  • 1/4 cup heavy cream
  • Fresh dill, chopped for garnish
  • Green scallions, sliced for garnish

Instructions

  1. Cook diced bacon in a large pot over medium heat for about 5 minutes until crispy.
  2. Remove bacon and leave the rendered fat in the pot.
  3. Add butter and diced onion, sauté for 3 minutes until translucent.
  4. Stir in minced garlic and cook for 20 seconds.
  5. Pour in chicken broth and scrape up browned bits from the bottom.
  6. Add bay leaves, garlic powder, onion powder, dried dill, dried chives, salt, and pepper. Simmer 5 minutes.
  7. Stir in shredded chicken and simmer another 5 minutes.
  8. Add cream cheese and cheddar cheese, whisk until melted and smooth.
  9. Stir in baby spinach and heavy cream. Simmer 3 minutes while stirring.
  10. Remove bay leaves, adjust seasoning, and top with bacon, fresh dill, and scallions before serving.

Notes

  1. Let cream cheese soften at room temperature before adding for smoother melting.
  2. Keep heat low after adding dairy to prevent separation.
  3. Soup thickens slightly as it cools.
  4. Store refrigerated up to 4 days and reheat gently.

Food safety: if you cook the chicken yourself, make sure it reaches an internal temperature of 165°F (74°C), as recommended by the USDA and Health Canada.
