- 2.2 lb boneless, skinless chicken thigh fillets
- 1 medium onion, finely chopped
- 1 medium bell pepper, sliced
- 1 medium carrot, grated or thinly sliced
- 2 tablespoons sour cream
- 1 tablespoon prepared mustard
- 1 tablespoon all-purpose flour
- 3/4 to 1 cup water
- Salt, to taste
- Black pepper, to taste
- 1–2 tablespoons vegetable oil
Instructions
- Cut the chicken thigh fillets into bite-size pieces and season lightly with salt and black pepper.
- Heat vegetable oil in a large skillet over medium heat and cook the chicken until lightly browned.
- Add the chopped onion and cook until softened.
- Stir in the bell pepper and carrot and cook until vegetables begin to soften.
- Whisk together sour cream, mustard, flour, and water until smooth.
- Pour the sauce into the skillet and stir to combine.
- Reduce heat, cover, and simmer until the sauce thickens and the chicken is fully cooked.
- Adjust seasoning and serve hot.
Notes
- Greek yogurt can replace sour cream for a lighter, tangier sauce.
- Serve over rice, mashed potatoes, or pasta.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
