Description

Creamy Parmesan Italian Sausage Ditalini Soup is the ultimate bowl of comfort—rich, savory, and loaded with flavor. With hearty Italian sausage, tender pasta, a medley of veggies, and a velvety Parmesan cream base, this cozy soup is easy enough for weeknights but satisfying enough to serve to guests. It’s a family-favorite recipe that feels like a warm hug in every bite.

Ingredients

Scale
  • 1 lb Italian sausage (mild or spicy)

  • 1 tbsp olive oil

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 3 medium carrots, diced

  • 2 celery stalks, diced

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • ½ tsp red pepper flakes (optional)

  • 6 cups chicken broth

  • 1 (14.5 oz) can diced tomatoes, undrained

  • 1 cup ditalini pasta

  • 1 cup heavy cream

  • 1 cup grated Parmesan cheese

  • Salt and pepper, to taste

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Sausage
In a large pot, heat olive oil over medium heat. Add sausage and cook for 5–7 minutes, breaking it up with a spoon until browned. Drain excess fat.

  2. Sauté the Vegetables
Add onion, garlic, carrots, and celery. Cook for about 5 minutes, stirring occasionally, until vegetables begin to soften.

  3. Add Seasonings
Stir in oregano, basil, and red pepper flakes (if using). Cook for 1 minute until fragrant.

  4. Add Broth and Tomatoes
Pour in the chicken broth and diced tomatoes. Bring the soup to a boil.

  5. Cook the Pasta
Stir in the ditalini pasta and cook for 8–10 minutes, or until al dente.

  6. Make It Creamy
Lower heat to a simmer. Stir in the heavy cream and Parmesan cheese until fully combined and smooth.

  7. Season and Serve
Taste and season with salt and pepper. Garnish with chopped fresh parsley. Serve hot.

Notes

Use spicy Italian sausage for extra flavor, or go with mild for a kid-friendly version.

To avoid mushy pasta in leftovers, cook it separately or add only when ready to serve.

Stir in fresh spinach or kale at the end for extra greens.

Add more broth if the soup thickens too much while cooling.

Freshly grated Parmesan will melt smoother than pre-shredded.
