1 lb Italian sausage (mild or spicy)

1 small onion, diced

3 cloves garlic, minced

4 cups chicken broth

1 can diced tomatoes, drained

1 cup ditalini pasta

1 cup heavy cream

2 cups fresh spinach, chopped

1/2 cup grated Parmesan cheese (plus extra for garnish)

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)
Instructions

Heat olive oil in a large pot over medium heat. Add sausage, breaking it apart as it browns. Remove once cooked through.

In the same pot, sauté onion and garlic for 2–3 minutes until fragrant.

Add chicken broth and drained tomatoes. Return sausage to the pot and bring to a simmer.

Stir in ditalini pasta. Cook for 8–10 minutes until al dente.

Reduce the heat and stir in heavy cream, Parmesan, and spinach. Cook until spinach wilts and soup thickens slightly.

Notes
Choose mild or spicy sausage depending on preference.
For extra veggies, add mushrooms or zucchini with the onions.
To freeze, omit pasta until reheating.
