450 g Italian sausage, casings removed

1 onion, diced

2 cloves garlic, chopped

1/2 tsp ground fennel (optional)

1/2 tsp red pepper flakes (optional)

950 ml chicken broth

1 (410 g) can petite diced tomatoes

225 g pasta (such as ditalini; use gluten-free if desired)

1 tsp Italian seasoning or oregano

60 g parmesan cheese, grated

115 g cream cheese (warmed)

120 ml heavy cream

Salt and pepper, to taste

1 tbsp fresh parsley, chopped (optional)
Instructions

In a large saucepan over medium heat, brown the sausage and diced onion until fully cooked. Drain any excess fat.

Stir in the garlic, fennel, and red pepper flakes. Cook for 1 minute.

Add chicken broth and diced tomatoes. Stir in the uncooked pasta and Italian seasoning. Bring to a boil, then reduce to a simmer. Cook for 6β8 minutes.

Stir in parmesan cheese, warmed cream cheese, and heavy cream. Simmer for 3β5 more minutes until the soup is creamy and smooth.

Season with salt and pepper to taste. Garnish with parsley before serving if desired.
Notes
Let cream cheese warm to room temp for easier blending.
Adjust spice level to your taste with or without red pepper flakes.
