Description

Creamy shrimp pasta with garlic, spinach, tomatoes, and Parmesan in a rich cream sauce.

Ingredients

Scale
  • 12 oz dry pasta
  • 14 oz raw shrimp
  • 3 1/2 tbsp unsalted butter
  • 3 cloves garlic
  • 1 cup cherry tomatoes
  • 2 1/2 cups fresh spinach
  • 3/4 cup plus 2 tbsp heavy cream
  • 2/3 cup grated Parmesan
  • Salt
  • Black pepper
  • Paprika

Instructions

  1. Cook pasta until al dente and reserve pasta water
  2. Season shrimp with salt pepper and paprika
  3. Cook shrimp in butter until just done and set aside
  4. Sauté garlic then add tomatoes
  5. Stir in cream and spinach and simmer gently
  6. Mix in Parmesan until smooth
  7. Add shrimp and pasta and toss with sauce
  8. Adjust seasoning and serve

Notes

  1. Half-and-half can replace cream for a lighter sauce
  2. Freshly grated Parmesan melts best
  3. Reheat leftovers gently to avoid overcooking shrimp
