Ingredients
-
4 boneless, skinless chicken breasts (≈1.5 lbs / 680 g)
-
1 cup (200 g) uncooked rice
-
2 cups (480 ml) chicken broth
-
1 cup (240 ml) heavy cream (or half-and-half / non-dairy alternative)
-
1 medium onion, diced (≈150 g / 5 oz)
-
3 garlic cloves, minced
-
1 cup (150 g) frozen peas (optional)
-
2 tbsp (30 ml) olive oil
-
1 tsp paprika
-
1 tsp salt
-
½ tsp black pepper
-
½ tsp dried thyme
-
½ tsp parsley (fresh or dried, for garnish)
Instructions
-
Rinse rice until water runs clear. Cook in chicken broth until tender, then set aside.
-
Heat olive oil in a large skillet over medium. Add onion and sauté 2–3 minutes until translucent.
-
Stir in garlic and cook 1 minute until fragrant.
-
Season chicken with paprika, salt, pepper, and thyme. Cook 5–6 minutes per side until golden and cooked through (165 °F / 74 °C). Remove and keep warm.
-
Lower heat, pour in cream, and stir to deglaze pan. Simmer 2 minutes.
-
Add peas (if using) and cook 2–3 minutes until warmed through.
-
Return chicken to skillet, nestling into sauce. Simmer on low 5 minutes to blend flavors.
-
Serve chicken and sauce over rice. Garnish with parsley.
Notes
Swap heavy cream with half-and-half, oat, or coconut milk.
For fluffier rice, rest 5 minutes after cooking before fluffing with a fork.
Add mushrooms, peppers, or spinach for more veggies.
Adjust sauce thickness by simmering longer or adding broth.
Leftovers reheat best with a splash of broth or cream.
