Description

A flavorful and crunchy Crispy Dill Chicken Sandwich featuring marinated fried chicken breasts with dill aioli, cheddar cheese, lettuce, and pickles on toasted brioche buns.

Ingredients

Scale
  • 2 large boneless skinless chicken breasts
  • 1 cup buttermilk
  • 2 tablespoons dill pickle juice
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1 tablespoon dried dill weed
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup mayonnaise
  • 2 tablespoons fresh dill
  • 1 tablespoon lemon juice
  • 1 garlic clove minced
  • 1 teaspoon Dijon mustard
  • 4 brioche buns
  • 4 slices cheddar cheese
  • 1 cup shredded lettuce
  • 1/2 cup dill pickle chips
  • 2 tablespoons melted butter
  • 4 to 6 cups vegetable oil

Instructions

  1. Whisk buttermilk, pickle juice, egg, and seasonings together in a bowl.
  2. Marinate chicken breasts for at least 2 hours or overnight.
  3. Mix flour, cornstarch, dill weed, baking powder, salt, and pepper in a shallow dish.
  4. Dredge chicken thoroughly in the flour mixture.
  5. Heat oil to 350 degrees Fahrenheit in a heavy pot.
  6. Fry chicken for 6 to 8 minutes per side until golden and cooked through.
  7. Drain fried chicken on a wire rack.
  8. Mix mayonnaise, dill, lemon juice, garlic, and Dijon mustard for the aioli.
  9. Toast buttered brioche buns until golden.
  10. Assemble sandwiches with aioli, lettuce, chicken, cheese, and pickles.

Notes

  1. Marinating overnight creates the best flavor and tenderness.
  2. Double dredging gives the chicken extra crunch.
  3. Maintain proper frying temperature for crispy results.
  4. Toast buns before assembling to avoid sogginess.
  5. Store leftovers separately for best texture.
