Ingredients

1 cup fresh, frozen, or canned corn (drained)

1 tsp baking powder

1 egg

¼ cup milk

2 tbsp chopped green onions

Zest of 1 lime

Juice of ½ lime

Instructions

Make the batter: In a large mixing bowl, combine the corn, jalapeños, cream cheese, cheddar cheese, green onions, cilantro, lime zest, and lime juice. Mix until even.

Prepare wet ingredients: In a separate bowl, whisk together the egg and milk. Add it to the corn mixture.

Add dry ingredients: Stir in flour, cornmeal, baking powder, smoked paprika, salt, and pepper. Mix until thick but scoopable. Add more milk if it’s too thick, or a little flour if too wet. Let the batter rest for 5 minutes.

Cook the fritters: Heat oil in a skillet over medium heat. Use a spoon to drop batter into the pan, flattening slightly. Cook for 2–3 minutes per side until golden brown and crispy.

Drain: Place the fritters on a paper towel to remove excess oil. Serve hot.
Notes
For a gluten-free version, use a 1-to-1 gluten-free flour blend.
You can swap cheddar for mozzarella or Monterey Jack for a different flavor.
To make it dairy-free, use plant-based cream cheese and cheese alternatives.
