Description

Crispy Salmon Bowl is a quick and healthy meal with seared salmon, rice, and fresh vegetables.


Ingredients

Scale
  • 2 salmon fillets (skin-on)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 2 cups cooked jasmine rice or brown rice
  • 1/2 avocado sliced
  • 1/4 cup cucumber sliced
  • 1/4 cup shredded carrots
  • 1/4 cup edamame
  • 1 tablespoon sesame seeds
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon honey
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon sriracha

Instructions

  1. Pat salmon dry and season with spices
  2. Heat oil and cook salmon skin-side down until crispy
  3. Flip and cook until done
  4. Mix sauce ingredients in a bowl
  5. Assemble rice, salmon, and vegetables
  6. Drizzle sauce and garnish with sesame seeds

Notes

  1. Swap rice for cauliflower rice for low carb option
  2. Add pickled ginger or seaweed for extra flavor
  3. Use peas or spinach instead of edamame
