Description

This Crock Pot Marry Me Chicken is a creamy, slow-cooked comfort meal featuring tender chicken breasts simmered in a rich parmesan and sun-dried tomato sauce. It’s simple, flavorful, and perfect for weeknight dinners or special occasions.


Ingredients

2 pounds boneless, skinless chicken breasts

1/2 cup sun-dried tomatoes (packed in oil, drained and sliced)

1 cup heavy cream

1 cup low-sodium chicken broth

1/2 cup freshly grated parmesan cheese

3 garlic cloves, minced

1 teaspoon paprika

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil or butter

1 tablespoon cornstarch (optional, for thickening)

Fresh basil leaves, chopped

Cooked pasta, rice, or mashed potatoes for serving


Instructions

1. Pat chicken dry and season both sides with salt, pepper, paprika, and Italian seasoning.

2. (Optional) Sear chicken in olive oil or butter for 2–3 minutes per side for extra flavor.

3. Add minced garlic, sun-dried tomatoes, and chicken broth to the crock pot. Place chicken on top.

4. Cover and cook on Low for 3–4 hours or on High for 2–2½ hours until chicken reaches 165°F.

5. About 20 minutes before serving, stir in heavy cream and parmesan cheese.

6. If desired, mix cornstarch with water and add to thicken the sauce.

7. Top with fresh basil and serve hot over pasta, rice, or mashed potatoes.

Notes

For best flavor, use sun-dried tomatoes packed in oil.

Leftovers can be stored in an airtight container for up to 4 days.

Add a splash of broth or cream when reheating to keep the sauce creamy.
